Sweet and tart salad that is a great side for Thanksgiving or take along dish to a pot luck.
First Layer:
1) Drain pineapple, reserving the syrup/juice
2) Add enough water to syrup to make 2 1/2 cups
3) Place half the syrup mixture in a sauce pan and bring to a boil dissolving half the strawberry gelatin in mixture, and add 1/2 of drained pineapples and 1/2 of cranberry sauce.
4) Pour into mold bowl or serving dish and chill until firm
Second Layer:
1) Beat cream cheese and sugar until smooth
2) Gradually beat in evaporated milk and vanilla
3) Soften unflavored gelatin in the cold water. Heat, dissolve and pour into cream cheese mixture
4) Pour over firm Cranberry layer and chill until firm
Third Layer:
Repeat step in first layer using the remaining ingredients and chill until firm and serve
Each layer must be firm before adding the next.
