My personal favorite pie. The filling is also great on its own as a side!
For the dough, combine the dry ingredients in a bowl. Cut the butter into chunks and add it to the bowl. With your fingertips, rub the butter into the flour until it forms a coarse crumbles, being careful not to allow the butter to soften and melt. Stir in the water and toss withe a fork. Gather the dought in to a ball, handling as little as possible. Wrap and chill.
For the filling,peel,core and slice the apples into a large, shallow skillet. Add suger, butter and cinnamon. Stir. Cover and cook until water evaporates, about 10 minutes. Cool.
For the crumbs stir the sugar into the melted butter. Stir in flour. Let stand a few minutes, then rub into large crumbs with fingertips. On a floured surface, roll dough into a circle large enough to fir into a 9-inch pie pan (preferably glass). Fit into pan. Turn edges under and crimp. Pour in filling, smoothing top. Scatter crumbs over filling. Bake at 350 degrees for 30 minutes. Cool on a rack. For the glaze, combine confectioner''s sugar and one teaspoon rum in a small saucepan. Stir until creamy,adding rum if necessary. Add cinnamon and stir over low hear until warm. Drizzle form a teaspoon over cooled pie.
