This is so easy to make. From Star of Texas Cookbook.
Preheat oven to 400(F)degrees. Place chicken in a oven proof pan skin side down. Sprinkle with salt and pepper. Melt cranberry sauce, soy sauce, butter and lemon juice in a pot on the stove. Pour sauce over chicken and cook in oven for 30 minutes uncovered. Turn chicken over and cook another 20 to 30 minutes. Serve with couscous or rice. Adapted from The Star of Texas Cookbook.
