Delicious gluten free Christmas cake with tartness of cranberries and sweetness of figs.
Chop figs and dates to same size as sultanas. Put in a large bowl with cranberries, sultanas, currants, raisins, jam & pour over the brandy. Cover and leave overnight at least. Preheat the oven to 150C. Grease and line the sides and base of a 20cm square or 22cm round cake tine. Use cardboard on the base to prevent burning. Beat the sugar and butter using an electric mixer until they form a pale creamy paste. Add the eggs one at a time beating well after each addition. Stir in the fruit, almonds, juice and zest of the orange. Whisk together the flour, almond meal and spices until evenly combined. Add the fruit mixture and mix lightly until well combined. Spoon the mixture into the tin and smooth over the surface. Decorate the top with the extra almonds. Put the tin in the middle of the oven and cover with foil. Bake in the oven for an hour then remove the foil (and keep for later) and continue cooking for another hour and forty five minutes. Check whether cake is cooked using a skewer. Cook further if skewer comes out sticky. Once you are happy that the cake is cooked pour the extra brandy over the top of the cake. Cover with the foil and then wrap the cake in the tin with two tea towels. Cool over night. Can be stored for 6 weeks in an airtight container. Could also be made into 5 smaller individual cakes but reduce total cooking time to 1 hour 45 minutes.
Make sure that mixture is pushed into corners/edges of cake tin before cooking to avoid air holes. Allow plenty of time to cook this cake as oven temperatures vary and it may take longer than the times shown.
