1. Preheat oven to 375° F.
2. On a floured surface, roll out the crescent dough or semi-thawed puff pastry into a rectangle. Cut the dough into 24 equal squares.
3. Press a square of dough into each cup of a mini muffin tin.
4. Press a small slice of brie into each well and top with a dollop of cranberry sauce.
5. Bake for 15 minutes, or until golden. Drizzle with honey while warm from the oven. Garnish with a sprig of rosemary to serve.
Bites can be baked in advance and frozen until the day off, and then, simply re-warmed in a 350° F oven for 10 minutes before serving.
