Grease and flour 2 8 X4X2 loaf pans
Combine first 4 (wet) ingredients and mix well
Combine rest of ingredients in a large bowl
Add 2 bowls together and mix til moistened
Stir in cranberries
Spoon into pans and rap to even.
Bake about 50-60 minutes--start checking after 50 minutes til toothpick inserted comes out clean.
Alt: to make 3 loaves or 2 larger loaves or 5-6 minis:
3 c flour
1T plus 2tsp pumpkin pie spice
2t baking soda
1 1/2 tsp salt
3 c sugar
1 can pumpkin
4 eggs
1 c oil
1/2 c oj or water
1-2 c cranberries
60-65 min for large
55-60 min for 3 smaller
50-55 min for mini
