Preheat oven to 350
Grease and flour a loaf pan
Combine dry ingredients in a medium mixing bowl. Combine remaining ingredients, except cranberries, in a separate mixing bowl. Add wet ingredients to dry ingredients, stirring just until moist. Stir in cranberries.
Spread evenly in loaf pan (batter will be thick). Bake 70-75 minutes, or until a toothpick inserted into the center of the bread comes out clean. Remove from pan. Cool completely on wire rack.
Note: Depending on the size of your loaf pan, baking times may vary. I use a 9x3 loaf pan and it takes a little over an hour. A smaller loaf pan would probably increase baking time due to the denseness of the bread. Always check center with toothpick for doneness.
