CRANBERRY JALAPENO RELISH

1 Bag Cranberries (sorted, washed & stemmed)
coarsely & evenly ground in food processor
2 large celery ribs, minced fine
1 small white onion (4oz.) minced fine
1 Jalapeno seeded & minced fine
½ t. salt
¾ C. sugar
3 T. fresh lime juice (about 1 ½ limes)
¼ C. cilantro, chopped – add just before serving
Mix together all ingredients. Can be made a day ahead,
but do not add cilantro until ready to serve.
Great with turkey or chicken enchiladas!
Can be made ahead and keepsa few days!
