A refreshingly light cheese ball made with cream cheese, pineapple, bell peppers and green onions.
Mix everything together. Refrigerate for several hours; overnight is best. Serve with crackers.
Dole crushed pineapple in its own juice is great for this.
If you have a nicely shaped container, line it with wax paper and then put the cheese mixture in to harden. When you’re ready to serve it, invert the container over the serving dish and peal the wax paper off creating the cheese ball appearance. You can put crushed pecans around the exterior; however it goes over well without them.
