Remove green stalks from leeks, just white and light. Slice in half length-wise and wash thoroughly, fanning the edges as you're running them under cold water. Slice halves lengthwise in half again, then slice width-wise into roughly 1/2 inch square pieces.
Add butter to soup pot over medium heat and saute leeks until tender and clear, always stirring, about 10 minutes. Do not let them brown or colour, reduce heat of necessary.
Remove tough ends of asparagus and discard, then chop asparagus into rough 1/4 inch pieces. Add to pot with all the spices and saute on medium low heat with the leeks for 5 minutes until fragrant and bright green.
Add chicken stock and simmer, bring to a slight boil, just barely bubbling, and simmer like that for 10 minutes. Asparagus should be tender.
Using a slotted spoon, lift about half of the leeks and asparagus pieces out of the soup into a bowl and set aside. Use an immersion blender to puree the soup in the pot until desired texture is reached. It can be very smooth, or just a rough puree. The more asparagus and leeks you lift out, the chunkier your soup will be.
Return the leeks and asparagus to soup and add cream. Bring back to just before a boil, and simmer for another 5 - 10 minutes. Keep a close eye on it, if the cream boils the soup goes all funny.
Mix corn starch with water until dissolved, add to soup. Let simmer for another 5 - 10 minutes. Use more cornstarch if you would like a thicker soup.
Turn heat off, cover, and let sit for 10 or 15 minutes before serving.
Keep a close eye on the soup after you've added the cream. This is so important.
