A smokey cream soup that comes off as a cross between cream of chicken soup and chowder. The recipe requires smoked turkey stock (see separate recipe).
Melt butter in a large soup pot over medium heat. Add the chopped vegetables along with a generous pinch of kosher salt and cook, stirring occasionally, until soft, 10-12 minutes. Add flour and cook, stirring constantly for 2 or 3 minutes more.
Pour in the broth and bring to a boil while whisking constantly. This works best if the stock is not boiling hot to start with as the hot stock can shock the flour and cause lumps. Make a bouquet garni by tying the sprigs of thyme and parsley together with the bay leaves using a piece of kitchen twine and add to the soup. Lower the heat and simmer for 15 minutes.
Stir in the chopped turkey and bring to a boil. Remove from the heat.
Whisk in the heavy cream and sherry. The turkey is typically rubbed with a salt-heavy rub so sample before adding salt and pepper to taste. Remove and discard the bouquet garni. Ladle into soup bowls and sprinkle with the chopped parsley. Serve piping hot.
