(Pate A choux dough)
A great spin on a classic french recipe.
1. Preheat oven to 375°(F). Place milk, creamer, butter and salt in a 3 quart
sauce pan band place on medium high heat. Whisk as the butter melts to
prevent the milk solids from scolding to the bottom. Bring the liquid to a
boil and remove from the heat. Add flour all at once and stir to form a
dough "ball". The dough will pull away from the sides and come together
looking like a very dry play doh. Allow to rest for about 10 minutes, long
enough to let the glutton rest and the dough to cool down. Place in a food
processor and blend for 10 seconds until all the dough is broken up. Add
eggs one at a time, allowing to blend well between eggs. After the fourth
egg, check dough for consistency. It should be bright yellow like the color
of egg yolk and creamy like warmed peanut butter.
2. Prepare a parchment lined cookie sheet. Place pastry dough in pastry bag
fitted with a wide mouthed piping tip or a large flowering tip. Pipe dough
into large rounds, small rounds or fingers depending on the size cream puff
(profiteroles) you are looking for.
3. Bake in oven for 15 minutes or until puffs are a light golden caramel
brown on the top. Remove from oven and coat them in egg wash and place back
in the oven for another two minutes to create a glean on the tops. Remove
from oven and allow to cool.
4. Filling: You can attach a small tip piping tip onto a pastry bag filled
with mousse, custard, whipped cream and puncture the side of each puff and
fill. You can also cut tops off and fill with cream, mousse, or other
dessert toppings. ALSO great for savory fillings. For fingers, pipe mousse
on top or dip in chocolate.
