Excellent cream puff recipe that is quick and fail-proof.
Preheat oven to 400 degrees. In a small saucepan combine: water, butter, and salt. Over medium heat, bring to boil. Remove from heat. Immediately with wooden spoon, beat in all the flour. Over low heat, beat mixture until it leaves the side of the pan and forms a ball (1 to 2 minutes). Remove from heat. Add 1 egg. With wooden spoon, beat until well blended. Add other egg and beat until dough is shiny and satiny (about 1 minute). Drop dough by rounded teaspoonful, 2 inches apart onto greased cookie sheet. Bake 35-40 minutes or until golden brown. Prepare vanilla pudding, following directions on box. Fill cream puffs just before serving.
