Heat water and butter to boiling. While it boils add flour all at once, stirring constantly until it forms a ball in the center of the pan. Remove from heat and let cool 5-10 mins. Beat in eggs one at a time beating thoroughly after each egg. The beast the entire mixture 100 times (I usually do it for 3-5 minutes with the mixer). Drop onto greased cookie sheet. Bake at 450?F for 10-15 mins or until puffed. Then decrease heat to 325?F for 20-25 mins or until light brown. Cool and fill with cream or custard.
