This is a nice "go to" recipe when the pantry is empty. Growing up it was the Sunday night dinner when Mom didn't want to cook.
Cut hard boiled eggs in two. Cube the whites and set aside. Mash the yolks and set aside. Melt butter in saucepan over low heat. Blend flour into butter. Heat over low heat while stirring for 5 minutes. Slowly add milk while constantly stirring. Continue heating slowly until thick and creamy. Add cubed egg whites. Place toast on plate with American cheese placed on top. Pour creamy mixture over toast and sprinkle mashed egg yolks on top. Serve immediately.
Makes 1 serving of 2 slices of toast.
For added flavor, try crumbling a couple pieces of bacon on top.
