1. In a large pan, heat the oil over medium heat. Add the shallots and ginger; cook and stir for 1 minute, until fragrant.
2. Add the kale and salt; cook and stir for 2 to 3 minutes, or until the kale is just wilted.
3. Stir in the milk; cover and cook for 2 to 4 minutes, until kale is tender. Stir in the aminos and serve.
