1. In a nonstick sauté pan, melt the butter over medium heat. Add the leeks and saute until wilted.
2. Add broth and boil liquid down by half.
3. Add cream, reduce until thick and perfect.
4. Stir in the parmesan cheese. Add a dash of cayenne and lemon juice. Salt and pepper to taste. Serve.
don't use the dark green part of the leeks. These are often gritty and bitter. Only use the white and light green section of the leeks :)
