Suggest a better descriptionGrate the stale bread into crumbs. Season with lemon zest, salt and pepper. Fry in a splash of olive oil till golden and crisp. Set aside.
Melt a nugget of butter in a large pan. Pile in the spinach. Season well. Gently stir until it's wilted yet still bright and glossy. Pop into a colander. Gently press out any excess liquid. Return to the pan. Squeeze in some lemon juice. Dust with grated nutmeg. Taste and adjust seasoning accordingly.
Swirl in the Parmesan and creme fraiche. Warm through briefly. Scatter breadcrumbs over the top and serve.
