Delicious low-carb side dish.
Use a large heavy skillet. Melt the butter over medium-low heat. Add garlic and cook 1 minute. Add the spinach, increase heat to medium, and cook, uncovered, until it wilts and much of the liquid is gone -- this took just a few minutes. Add the heavy cream and cook down for one to two minutes. Sprinkle in grated cheese and mix until melted. Remember that a giant bunch of spinach cooks down to nothing, and fight over the teeny-tiny delicious portions.
