A Favorite recipe of our children growing up!
1 kg fresh spinach – use only green leaves, wash several times
Places in large pot of boiling salty water – ca. 5 min – drain in colander – keep some of the water
In large pot melt butter (or ghee or olive oil), cook large onion (sliced or minced) until “glasig” (not raw, not brown!)
Add 2 EL flour, keep stirring until flour and butter and onion form a paste.
Add the drained spinach. Cook for a few minutes until blended. Now add 1 cup of the cooking water – it should be cool so it doesn’t make “Kluntern”. Add milk powder to make it creamy. You can also use milk instead of water and milk powder.
Now use a blender or Puerierstab to blend it all together.
Let it come to a boil for a couple of minutes. Add more water it too thick.
Add pepper and Nutmeg, more salt if needed.
Of course you need to eat it with boiled potatoes and fried eggs!
