Slice potatoes on a mandolin crosswise 1/4 inch thick.
Butter a 3 quart (3 liter) shallow rectangular or oval baking dish.
In a medium saucepan, simmer patato slices in Chicken broth with salt 10min. Remove from heat, drain and reserve broth.
Meanwhile, in medium skillet, melt butter and saute onion until tender. Stir in flour and cook a minute or two. Remove from heat and gradually whisk in drained broth. Return to heat; Add pepper, Thyme, Basil, Rosemary.
Simmer and stir constantly about 3 min.
Preheat oven to 375F.
Bake until the liquid is absorbed and the potatoes are tender when pierced with a fork, about 40 minutes.
Meanwhile, preheat a broiler. Sprinkle the cheese evenly over the potatoes and slip under the broiler. Broil until the cheese melts. About 2 minutes.
Serve at once
