1. Preheat the oven to 300F and grease four potion size dishes with butter
2. In a deep frying pan, fry the leeks and spinach on medium heat with 2 tbsp of water. Let it soak for 2-3mins.
3. Drain excess water from spinach and distribute evenly between the four dishes.
4. Crack two eggs into each dish on top of the spinach and season with salt and pepper. Pour a tbsp of cream on top and sprinkle cheese. Place dishes in oven and bake for 15 minutes or until egg are set.
