Rinse the green onions well. Cut them into thin strips.
In a stock pot lightly saute onions in butter until just soft. Sprinkle with flour. Add broth, milk and half and half a little at time. Stir constantly while heating.
Add crab meat. Let cook about 5 minutes. Do not let the milk scald.
Remove from heat. Add cheese, stirring until melted. Season to taste with the salt and pepper. Return the soup to heat and heat slowly, but do not boil.
In a bowl, beat egg yolk and cream. Add hot soup to bowl whisking constantly until blended.
