Place chicken in a covered roaster and spray with olive oil, add salt and pepper
Bake covered for 35-45 minutes.
Shred chicken with 2 forks, add:
1 cup of shredded cheese
salt and pepper
Place chicken mixture into tortillas and lay in baking dish
In a medium saucepan, melt butter. Stir in flour and let cook and thicken for 1 minute, add chicken broth and whisk until smooth, stir in sour cream and chiles. Do not let mixture boil. Take sauce off the heat and pour it over the enchiladas. Top with the remaining cheese.
Bake for about 20-25 minutes. Turn on the broiler for the last minute or two until the cheese is slightly brown and bubbly.
