This is good
Preheat oven to 350 F. Mix yogurt, cottage cheese, onion and parsley. Set aside. Mix tomato sauce, chili powder and cumin in saucepan and heat. Warm tortillas a few seconds in microwave oven. Place one-fourth cup yogurt mixture into center. Roll up tortillas and place in baking dish. Pour enchilada sauce over the top. Sprinkle with grated cheese. Bake uncovered for 30 minutes.
Serves: 12 (2 enchiladas per person)
