1. Prepare pasta.
2. While pasta is cooking, sauté onions in olive oil, 3 minutes. Add chorizo and cook fully, about 5 minutes.
3. Add bell peppers, garlic, chipotles, paprika, lemon zest, 1/2 teaspoon salt, cream, and tomato paste. Bring to boil, then lower heat and simmer for 3-4 minutes.
3. Add the Cotija cheese and stir until incorporated into sauce.
4. Fold in the cilantro and cooked pasta.
