Another variation on just plain couscous.
Prepare couscous according to package directions except use olive oil instead of butter and 1 cup of milk instead of 1 cup water. Add spinach, Italian seasoning and basil. Mix together with a fork. Stir in lemon juice and tomatoes right before serving. Garnish with extra cherry tomatoes.
