Rich and tasty stewed creole tomatoes make a delicious breakfast or brunch side dish. Serve over warm biscuits with eggs and sausage.
Melt the butter in a large non-stick skillet. Add tomatoes, salt and sugar and saute on medium high stirring often. Cook for 10 minutes. Add flour and cook 1 minute. Add milk gradually and lower heat. Sauce will thicken. Serve over warm biscuits.
