Drain the cooking water, return the potatoes to the pot and place them on the hot burner for 1 minute to remove excess moisture. With a potato masher, mash the potatoes until they are free of lumps. An electric mixer will speed the process. **TIP: For a rich, creamy texture without fat, whip in evaporated skim milk. Add a dash of pepper and whip until fluffy.
