Place toast cubes in small bowl. Pour juice from can of fire roasted tomatoes over the bread. Let sit at least 10 minutes.
In food processor, add all chpd veggies. Puree til they start to breakdown.
Add the bread and its juices plus vinegar to the food processor. Turn on and then gradually stream in the evoo. Refrigerate til ready to serve chilled. If too thick add some v8 juice. Serve in glass bowls.
