Delicious hearty Mushroom Soup
In a large skillet, melt butter on medium heat. Add the onion and cook until caramelized. Add the garlic and the chopped portobello and white mushrooms. Make sure to chop them really well. (This makes it the soup thicken, and you
won't have to grind mushrooms in a blender.) Cook for about 4 minutes to
sweat the great flavor from the mushrooms.
Then add 2 cups of the broth, (set 1 cup aside), and the flour to the
mushrooms. Stirring all together, then add the salt, pepper and nutmeg.
Meanwhile, in a large sauce pan, add the other cup of broth, heavy cream
and milk. Stir together and cook on medium until milk starts to bubble around edges. Add the mushrooms to the milk, and stir together well. Continue
to stir until all heated through. Add more salt or pepper if needed. Be careful
not to scorch the bottom.
Chop the mushrooms to make it thicken nicely
