Stir gelatin into cold water until dissolved. Add boiling water, oj concentrate and lemon juice. Stir until smooth. Add sugar and continue stirring until dissolved. Refrigerate until mixture starts to thicken, about 1 hour.
Whip heavy cream to stiff peaks. Fold into OJ mixture. Tear cake into bite-sized pieces and place in 9x13. Pour oj mixture over cake pieces and cover. Refrigerate overnight. Just before serving, sprinkle with nuts and orange zest.
