Chicken: Melt butter, add onion, peppers, garlic. Saute til tender. Add chicken, s/p and soup. Simmer til chicken is done, 20 min or so. Add sour cream.
Waffles: Stir together first 5 ingred. Stir together egg and next 3 ingred, add to cornmeal mixture, stirring just until dry ingred are moistened. Bake in oiled, preheated waffle iron just until crisp. Pour chicken mixture over 2 waffles per serving and top w/cheddar.
Can serve w/ cornbread muffins as well.
