In a heavy based sauce pan, heat the milk & cream to just boiling.
Take the pan off the heat, with a whisk add the polenta, place a defusser in the heat and return the pan to the heat.stir continuously for 45mins to an hour, making sure that the polenta does not catch on the bottom of the pan.
The polenta becomes better if it is cooked for longer.
Great served with any roasted meats & steamed Swiss chard
