Suggest a better description1. Bring a large pot of salted water to a boil. Add the potatoes. Cook them until they are tender. Drain the water.
2. While the potatoes are cooking, heat a small skillet over medium heat. Melt the butter & saute the onions until they are golden brown. Set them aside.
3. Mash the potatoes with the cream of chicken soup & sour cream until the mixture is smooth & creamy. Mix in the onions, along with the 3/4 cup (175 ml) of cheddar cheese, salt & pepper.
4. Spoon into a 2 quart (2 L) casserole dish & bake in a preheated 350ºF (180ºC) oven for 30 minutes.
5. Sprinkle the remaining 1/4 cup (60 ml) of cheddar cheese over top of the casserole & bake an additional 10 minutes. Serve hot.
