Cook pasta according to pack instructions while preparing the meat.
Squeeze the sausage meat out of the skins then roll into small balls with your hands.
Heat the oil in a deep frying pan. Start frying the meatballs then add in the onion, garlic and mushrooms. Cook stirring occasionally for about 5 minutes until meatballs are browned and onion and mushrooms just cooked. Add in the tomatoes and cook for about another 2 minutes.
Combine the crème fraîche and mustard then add to the meatball mixture. Heat until the sauce is hot through. Season to taste. Mix with the pasta and garnish with parsley to serve.
