Here is how to prepare a delicious home-made "shortcut" coleslaw. A trip to the grocery for convenience foods makes this dish a cinch!
In a large mixing bowl, place 1/2 of a 14 oz. bag of coleslaw mix. Add 1/2 cup chopped green pepper, and stir together until green pepper is dispersed throughout the mixture. Now make the dressing. Place 1 cup mayonnaise in a small to medium mixing bowl. Add the 1/4 cup of white vinegar and the 1/4 cup of Splenda. Mix well. Add 1/4 teaspoon of celery seeds to the dressing mix, and incorporate them into the blend. Pour most of the dressing over the coleslaw mix in the large mixing bowl. Mix and judge whether you need to pour more dressing in until all of the dressing is used, if necessary. If you do not have enough dressing, just add more mayonnaise until the coleslaw mix is covered generously. Remove the finished coleslaw to a serving bowl, cover with plastic wrap, and chill in the refrigerator 4 hour, or until ready to serve. This version of coleslaw is fat-free and pretty much sugar-free, so it is quite healthy, and you can combine it with various main courses to complete a nice, colorful, and tasty meal!
