Melissa butter in 4 uqt saucepan. add apples, garlic,thyme, poultry seasoning, salt & pepper and stir to combine. Reduce heat to med and cook for 10 minutes stirring frequently til apples are golden and softened. Transfer to blender and return saucepan to stove. Add mashed sweet pots to food processor and purée til very smooth. May have to do in batches. Return mixture to saucepan, add milk and broth and cook over med high heat whisking til soup is thoroughly blended. Bring to a boil, reduce

While soup is cooking, melt 2 til butter. Add leeks and chives and cook 6-8 mins til golden brown & crispy.
Serve soup sprinkled with leeks and chives.
