Heat olive oil and butter until foamy, add onion, garlic and apple and cook until limp and fragrant.
Add flour and stir until creamy. Add tarragon, rosemary, cayenne pepper and S&P. Add chicken stock and wine.
Add heavy cream and stir regularly until thickened.
Add cooked chicken and heat through.
Serve over rice, noodles, or toasted french bread slices.
