Savory, moist chiken breast cooked with tomatoes, basil and heavy cream.
First, melt 2 tablespoons of butter in a 12 inch skillet. Season the chicken with salt and pepper, then cook it on medium to high for 8 minutes in the skillet. Put the chicken to the side.
Melt remaining butter in the same pan. Season the tomatoes and onion with salt, and cook them for 3 minutes, or until tender. Stir in the wine for an additional two minutes, or until the alcohol evaporates. Stir in the cream, and turn the heat to low. Return the chicken to the skillet and simmer for an additional 4 minutes, or until the sauce has thickened. Remove from heat, dish out onto plates and garnish with basil.
