Put all the ingredients in your blender and blend for 1 minute, scrape down the sides & blend one additional minute
Cook in a nonstick pan over medium heat, because of the butter you don't need to use additional oil
Pour a little batter in the pan and swirl around to coat the bottom. Cook a few minutes, flip, cook a few more minutes and layer the crepes in between wax paper
Great with salmon, cream cheese & chives
