COMBINE all ingredients, EXCEPT OIL, in food processor or blender.
PROCESS until smooth, scraping down sides as neeed.
POUR into bowl, cover and leaver on the counter for 2 hours.
IF BATTER is too thick,thin down by adding milk.(IT SHOULD BE like whipping cream)
PLACE a nonstick 7 inch skillet or crepe pan on medium high heat.
DIP a paper towel into oil and wipe out pan.
TAKE pan off heat and ladle in about 3 tablespoons batter, or enough to make thin layer.
TILT and shake pan so the crepe mixture coats the bottom.
SET the pan back on heat and cook batter for 30 seconds or until bubbles form.
LOOSEN crepe and flip over.
COOK for another 30 seconds.
FLIP onto a tea towel.
