In a large clean mixer bowl beat egg whites until stiff peaks form (tips stand straight). In a small mixer bowl beat together egg yolks, butter, and vanilla. In a separate bowl stir together sugar and flour. In small amounts, add the sugar and flour mixture to the egg yolk mixture alternately with the milk, beating after each addition to make a batter.
Gently fold the batter mixture into the stiffly beaten egg whites. Brush a 6" skillet with cooking oil and heat. Spoon a rounded tablespoon of batter into pan and spread with back of spoon. Cook over medium heat until underside browned (45-60 sec)
