Basic crepe recipe
Blend all ingredients except orange and Nutella, and pulse for 10 second using a hand blender. Place batter in the refrigerator overnight. This allows the bubbles to subside so crepes will be less likely to tear during cooking. Batter will keep for 48 hours.
Before cooking, gently stir batter with a fork until smooth. On medium, heat a small, flat non-stick pan. Add a pat of butter to coat. Pour one ounce of batter into the center of the pan and swirl to spread evenly. Cook for 30 seconds, then flip. Cook for another 30 seconds or until the right color is achieved, then remove.
This sweet crepes recipe can be topped with a variety of toppings, but our favorite is the classic mixture of Nutella with a squeeze of fresh orange juice.
Crepes keep in the refrigerator for a few days, or up to 2 weeks in the freezer.
Batter needs to sit a minimum of an hour, but we make it the night before and let it set overnight.
