Peel and slice the potato into french frie strips. Place them into a bowl of cold water for 1 to 6 hours. (Important step - Soaking peeled, washed and cut fries in cold water overnight removes excess potato starch, which prevents fries from sticking together and helps achieve maximum crispness)
Preheat oven to 375. When you are ready to bake drain the fries. Prepare a baking sheet with parchment paper lightly sprayed with cooking spray.
Place potatoes in a ziplock bag and sprinkle a little cornstarch and shake, repeat until all 2T have been evenly spread on the potatoes. They just need a light dusting.
Place the potatoes on the prepped baking sheet. Do not let them touch. They need some room to crisp. Drizzle them with 2T of olive oil, little salt/pepper.
Put in the oven for 15 minutes, flip them, and bake for another 20 minutes or until you can see they are crispy.
