Suggest a better descriptionPreheat oven to 350°. Beat 4 cups freshly grated sharp cheddar cheese; 2 cups all purpose flour; 1 cup butter, softened; 1 tablespoonful kosher salt; and 1/4 tsp. ground red pepper at medium speed with an electric mixer 30 to 60 seconds or until mixture forms a ball. Gently stir in 2 cups crisp rice cereal. Shape into 1 inch balls, and place 1 inch apart on ungreased baking sheets. Flatten each dough ball with a fork dipped in flour. Bake in batches, 25 to 28 minutes or until golden brown. Transfer wafers to wire racks and cool completely.
I made them with Kraft Extra Sharp Cheddar cheese. One 8 oz. block is 3 cups shredded. This recipe came from Nashville Junior League Cookbook, 1977.
