Line a large rimmed baking sheet with foil. Set a wire rack in the pan and coat with cooking spray. Drain the wings in a colander and pat dry with paper towels. Toss the wings with the grapeseed oil and the reserved spice mix, making sure to coat all wings evenly. Arrange the wings skin-side down on the rack in the pan and bake until they are golden brown and the skin is crisp, about 40 minutes, flipping the wings over halfway through. Meanwhile, preheat a grill to high. Prepare the mustard greens: Brush the mustard greens with the olive oil and season with the salt. Grill the greens until they are blistered and charred, about 30 seconds on each side. Transfer to a baking sheet and remove any tough stems. In a skillet, heat the coconut oil over medium-high heat. Add the mustards seeds and continuously move the skillet around until the seeds begin to pop, about 30 seconds. Increase the heat and add the shallots, chiles, ginger, basil, and lime zest. Cook until the shallots are golden, 2 to 3 minutes. To serve, spoon the coconut mixture over the mustard greens and enjoy with crispy chicken wings and ranch dressing.
