For this Spanish-inspired pizza, look for Spanish chorizo in fine grocery stores or specialty markets. It's a cured pork sausage similar to pepperoni, but is flavored with piquant Spanish pimenton.
To prepare chorizo, heat a medium skillet over medium heat, and add olive oil. Add the chorizo and cook, stirring occasionally, until beginning to crisp, about 2 to 3 minutes. Transfer chorizo to a paper towel-lined plate. Pour 2 tablespoons of fat from the skillet into a small heatproof mixing bowl, and whisk the sherry vinegar. Set aside.
Prepare a hot charcoal fire, preheat a gas grill to high, or heat a large grill pan over high heat. Brush grill grates or grill pan with a thin coating vegetable oil using a silicone pastry brush. Place chorizo, piquillo peppers, arugula, and cheeses in separate mixing bowls and place near grill. Bring rimmed baking sheet of dough rounds to grill and remove plastic wrap.
Lightly flour a rimless baking sheet or pizza peel. Place dough rounds one at a time on the baking sheet and carefully transfer to grill grates. Place 2 to 3 dough rounds on grill, cover, and cook until grill marks appear, about 2 to 3 minutes. Open grill and transfer dough rounds to another rimless baking sheet or large cutting board. Repeat with remaining dough rounds.
Flip each dough round so grill marks face up. Top each round with about 2 tablespoons of shredded cheeses, and arrange the chorizo rounds, and piquillo peppers on top of the cheese. Return topped dough rounds to grill, cover, and grill until cheese melts and second side is cooked, abut 3 to 4 minutes.
Drizzle the chorizo fat and sherry vinegar mixture on the arugula and lightly toss. Divide the dressed arugula on top of each grilled pizza. Transfer pizzas to individual serving plates and serve immediately.
