This recipe is from the Quaker corn meal canister, and it is my favorite way to fix catfish. It has all the crispy tastiness of deep-fried, but with a fraction of the oil. Just want to make sure everyone has a chance to try it!
Heat oven to broil.
Combine dry ingredients. Dip fish into milk; coat with cornmeal mixture. Brush with melted butter. Place fillets on broiler rack. Broil 5 inches from heat 5 to 8 minutes or until fish flakes easily and turns golden brown.
I have modified this recipe in the following ways. I omit the flour and use 1/3 cup cornmeal and 1/3 cup grated Parmesan cheese. I omit the Italian seasoning and instead use 1 teaspoon dried dill weed. Instead of brushing the fish with melted margarine, I lightly spray both sides of the fillets with butter flavored cooking spray (less fat, more crispy, and doesn't disturb the cornmeal/cheese coating). I eyeball the broiling. When one side turns golden with some brown highlights, I turn the fillets and broil the second side the same way.
