Easy and simple dish for lunch or dinner
Preheat oven to 180f. Line the base and sides of a shallow ceramic ovenproof dish with 16 of the pancetta slices. Place spinach in a bowl, pour over boiling water, stand for ten seconds, then drain. Dry on kitchen paper and roughly chop. Place spinach,ricotta,dill,mint,parsley,eggs,Parmesan,salt and pepper. Mix to combine. Spoon into lined dish. Cover with remaining pancetta slices and bake for 40mins, or until filling is set and pancetta crisp. Serve warm with simple green salad if desired.
Not much can go wrong. Just follow recipe and don't over cook
